Granita base
Ingredients
- Water500ml
- Bruised lemongrass4 stalks
- Makrut lime leaf, torn4 leaves
- Fresh lime juice60ml
- Caster sugar60g
- Fine saltpinch
Method

Simmer water with lemongrass and makrut, then steep 20 minutes off heat.

Strain and dissolve sugar and salt into the warm liquid.

Cool, add lime juice, and freeze in a shallow tray.

Scrape every 45 minutes until coarse crystals form.
